From Grandma’s Kitchen: Coconut Toffee

This melt-in-the-mouth item is a Christmas sweet. Its high amount of sweetness can satisfy those with a sweet tooth.

 

Ingredients:

2 cups of grated coconut

1 cup of milk

2 cups of granulated sugar

4 tbsp butter

2 tbsp of cashew nuts

Vanilla essence/ rose essence/ almond essence/ cardamom powder (You can choose any one of them)

Method:

Put the sugar, milk, half of the butter, and coconut in a pan on low heat. Keep stirring until all the sugar dissolves.

Cook the mixture until it reaches ‘soft ball stage’. (To test if it has reached this stage, drop a little mixture in cold water and see if it becomes a soft ball. )

Put in the remaining butter and then take the pan away from the fire.

Beat it for a while and then add the essence of your choice.

Transfer the mixture to a greased tray and cut it into squares when it cools down.
