Assado de Bife ~ Chef Rego

This Goan traditional dish features meat soaked in a beautiful spice marinade.

Ingredients:

1 kg tenderloin (undercut)

2 inches crushed ginger

10 crushed garlic cloves

10 crushed peppercorns

8 crushed cloves

2-inch piece of cinnamon

6 bay leaves

1 teaspoon turmeric powder

2 tablespoons Goan vinegar

2 crushed dried red chillies

2 diced onions

Water as required

Salt to taste

Oil to fry

 

Method:

  1. Wash the meat well and pat dry. Prick the meat thoroughly with a fork.
  2. Rub with salt, crushed garlic, ginger, peppercorns, turmeric powder, red chillies, and Goan vinegar. Keep aside for 1 hour.
  3. Heat oil and fry the marinated beef.
  4. Add all the remaining ingredients and simmer covered till cooked.
  5. Serve with sliced fried potatoes and roundels of onions.
