From Grandma’s Kitchen: Cashewnut Toffee

This dish is Goa’s famous cashewnuts turned into a sweet.


2 cups cashewnuts (grated)

1 bottle of milk

1 cup of sugar

4 tbsp butter

Vanilla and almond essence



Put the milk and sugar on low heat. Add the cashewnuts.

When it thickens, put the butter in.

Cook the mixture until it reaches ‘soft ball stage’. (To test if it has reached this stage, drop a little mixture in cold water and see if it becomes a soft ball. )

Add the essences and transfer to a buttered tray.

Cool and cut into square pieces.
